Kitchen Story: Chess Squares / Gooey Butter Cake


Oh. My. Yum.

Ever since I've had my first gooey butter cake courtesy of free lunch at Google (Thanks, Tiff!), I've been craving it a lot. Since this isn't exactly the healthiest recipe (read as an understatement), I have been putting off making it. But I finally caved the other night and decided to make it, including all the sugar and "butta". Good thing this recipe stayed true to the necessity of being quick & simple!

This recipe is adapted from a recipe I found on Pinterest by Kevin & Amanda.

What you'll need:
1 box yellow cake mix
3 eggs
8 oz cream cheese, softened
1/2 cup (1 stick) butter, melted (I made it "healthier" by using 1/4 cup butter, 1/4 veg oil)
4 cups (1 lb) powdered sugar (If you don't like sweets too sweet, I would cut it down to 3-3.5 cups)

Preheat oven to 300 and spray a 9×13 dish with cooking spray.

Mix cake mix, melted butter and one egg to a soft dough with a fork. Press into the bottom of the pan. 

Mix powdered sugar, softened cream cheese and remaining two eggs with a mixer until smooth. Pour on top of crust. 

Bake for 40-45 minutes or until top is golden brown.

Then...ENJOY the gooey buttery-ness. Yum.
